We've officially reached the LAST MONTH OF 2018! I am in utter disbelief. However, December is magical. I think we can all agree! One of my favorite things about the holiday season is baked goods.....but let's be real. We're all running around like maniacs this time of year and NOBODY has hours to be spending in the kitchen. Well I'm here to save the day! I've perfected my 5 ingredient vegan snickerdoodle cookie recipe, and you're going to love it. To be honest I'm living for it....and the fact that it only takes 30 minutes in total to make. *Saddie Saxton voice* you're welcome.
This recipe takes 15 min to prep + 10 min to bake.
*Preheat oven to 325 degrees F*
I bet you already have all of the ingredients needed to make these at home!
You will need:
1/3 C of softened vegan butter (I used earth balance)
2/3 C of brown sugar
1 C Flour (all purpose)
1 Tsp Vanilla extract
3-4 Tbsp cinnamon
First thing you will want to do is combine the butter and the brown sugar and vanilla extract.
NOTE: Do not warm up the butter in the microwave. You want the butter to be at room temperature or slightly cooler. Cooler is better.
I've found the easiest way to make these is with a hand-mixer, as it makes the texture light and fluffy. Beat them together until you get a pretty even mixture.
Next, add in your Flour. This is the consistency you're looking for. Something that is crumbly, but can be molded and rolled into cookies.
Form the mixture into balls. Roll each ball into a cinnamon + brown sugar mixture. Make sure every side is coated and place them on a baking tray. You don't have to line yours, my pan is just very old and not pretty...LOL.
Bake in the oven at 325 Degrees F for 8-10 minutes. Let cool for 5 minutes and enjoy!
